There once was a milkman-turned brewer named Pierre Celis who was responsible for the revival of the witbier as we know it in Hoegaarden, Belgium, in the 1960s. In the 1990s he moved to Austin and founded the first craft brewery in town, which closed in 2001.

His daughter has revived the brand and they’re brewing at least three really tasty beers: a Belgian style wit, an East Coast-style IPA, and a pale bock. She says, “Austin has its first craft brewery back.  It has been a labor of love to reopen Celis Brewery, and it is incredibly exciting to be back brewing my father’s original recipes like the famous Celis Wit and Celis Grand Cru using the proprietary yeast from Belgium… We are giving Austin a party of its history back.”

We’ve just tapped the pale bock (and I have the IPA and the wit in the wings waiting to go on), and it’s really really delicious. I sampled the lineup of all three beers and immediately ordered them all.
